Recipe - Quinoa & Feta Salad

One of the healthy Summer BBQ dishes to show off your healthy mindset and culinary skills


Try this tasty healthy quinoa salad – perfect for the summer BBQ – Quinoa and Feta Salad. It will make a large bowl for everyone, a much healthier alternative to cous cous or bread rolls.





Quinoa and Feta Salad – Recipe Ingredients:

75g (uncooked weight) Quinoa (pronounced keen-wa)

100g drained mixed beans or lentils

100g feta

75g chopped cashews

75g chopped dried apricots

Juice of 1 lemon

1-2 Tbsp Olive oil

1-2 handfuls of coriander

1- 2 grated carrot,

1-2 beetroots,

couple of spring onions

1/2 – 1 red pepper (or any other veg you prefer)

Vegan / Vegetarians can substitute the feta with tofu or just miss out altogether


Quinoa and Feta Salad – Recipe Instructions:

Cook quinoa as per packet instructions and let cool, chop and toss all the ingredients in a bowl for a seriously tasty lunch option. This great healthy meal is packed with the good stuff. Quinoa is classed as a super grain (although not actually a grain as such) because of its nutritious value exceeded that of others. Quinoa is also protein rich and gluten free.
